Chilled Peaches with Albana Spumante di Romagna

Ingredients:
(for one person):

one ripe and perfumed peach,
one glass of sweet Albana di Romagna Spumante DOCG,
sugar,
ice.
Preparation:
(easy):
Peel the peach, remove the stone and cut rather thick slices. Set them in a glass compote, pour one glass of cold Spumante di Romagna DOCG and sprinkle with a teaspoon of castor sugar. Refrigerate for about one hour and serve with three ice cubes.
